In my house, peanut butter is a food group all by itself. I keep jars of the stuff on hand and eat it on the daily—I use it as a dip for sliced apples; I add it to protein smoothies for some extra flavor; and it’s the main ingredient in one of my favorite desserts of all time: the peanut-butter brownies by my friend and big-time New York Giants fan, baker Kelly Banks (read the Sit Down interview I did with her here). Chocolate Peanut Butter Brownies
1/2 cup butter
1 cup white sugar
1 tsp. vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp. salt
1/4 tsp. baking powder
1 cup smooth peanut butter
2 cups peanut butter chips
Directions: 1. Preheat oven to 350 degrees. Grease and flour an 8-inch square pan. 2. In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan. 3. Take small spoonfuls of peanut butter and place on top of batter. With a butter knife, spread peanut butter throughout batter. Sprinkle peanut butter chips on top. 4. Bake in preheated oven for 25 to 30 minutes. Do not overcook. 5. Let brownies fully cool, then cut into 2-inch squares.
