In the Zone: The Hummus Toast With the Most

Working on Good Morning America and GMA Strahan & Sara, I get the inside track on a lot of the latest things going on in our culture. In the cuisine category, the newest food trend du jour is savory toasts. If you haven’t heard of them, then you need to get on the bandwagon because according to Real Simple magazine, hummus toast is something we all should be eating because it’s delicious and healthy (it’s being called the “official” toast trend for summer 2019). Of course, we had to do some of our own “research” (translation: eating) before we went along with it, and so we tapped our friends at Sabra for more info. Turns out, it’s not hard to make a killer hummus toast that everyone will love whether you’re making lunch for yourself or hosting a D.Y.I. brunch at home (this dish is perfect for the vegans in your life).

Hummus Toast with Spinach and Soft-Boiled Egg

Makes 1 serving

Ingredients:
1 egg
¼ cup Sabra® Classic Hummus
1 slice sourdough or multigrain bread (we like Ezekial 4:9 Sprouted Wholegrain Bread)
½ cup fresh spinach
1 tsp. chopped garlic (optional)
½ tsp. red pepper flakes (optional)
Salt to taste

Directions: 1. Place egg in a small pan. Fill pan with water until egg is covered and bring to boil. Boil egg for 4 minutes, remove from heat and place under cold running water. 2. Toast sliced sourdough to desired doneness. Set aside. 3. Make wilted spinach: Pour a tablespoon of water into a small frying pan, add spinach, and optional garlic. Heat over medium-high heat, and cook until spinach is just wilted, about 1 minute. 4. Spread Sabra® Classic Hummus over toasted bread. 5. Place wilted spinach over hummus. 6. Peel egg and place over spinach. Slice egg in half. 7. Garnish with salt, as desired and optional red pepper flakes. Enjoy!

Pro cook tip: Spice things up by adding a favorite trendy topping, like everything bagel seasoning or sriracha.
